One of our community members, Cara Shaw, a Registered Nutritional Therapist and Nutrigenomics Practitioner, has created an ingenious recipe that’s as practical as it is delightful.
Cara’s passion for nutrition is deeply connected to her work as a practitioner specialising in women’s health. At her private clinic, she provides personalised toolkits that empower her clients to reach their health goals and enhance their overall wellbeing. Her dedication to this work stems from her own health journey. For years, Cara struggled with undiagnosed PCOS and endometriosis, conditions that left her feeling unsupported in a system that didn’t fully understand her needs. It wasn’t until a challenging fertility journey that she began exploring nutrition and lifestyle changes to reclaim control over her health.

These carrot cake energy balls are a prime example, and an undoubted family friendly crowd pleaser:
Ingredients
- 1 cup grated carrot
- 1 cup medjool dates
- 2 cups coconut flakes
- 1 glug of your favourite milk
- 1 scoop of Organised
- ¼ cup smooth cashew or peanut butter
- Pinch of sea salt
- ½ cup desiccated coconut (for the topping)
Method
- Add all the ball ingredients to a high-speed blender and whizz until well combined. You want a sticky but pliable texture that can be rolled into balls.
- Once all mixed, take the mixture out of the blender and add to a bowl - have two plates ready - one for adding the coconut to outside layer and one for placing the finished energy balls.
- Roll into balls and add to the plate of desiccated coconut to coat each ball, then plate up onto the clean plate.
- Continue the process until you use up the mixture. It should make around 15 balls.
- Pop the plate into a freezer to chill the balls for about 20-30 minutes.
- You can keep them in the freezer for more of a bite or leave in the fridge for a softer texture.
- You can keep these in the fridge for 3 days or pop in the freezer for up to three months (if they last that long!)
