Ingredients
- 200g dried apricots
- 1/2 cup desiccated coconut + extra for dusting
- The zest of 1 organic lemon
- 1 heaped tbsp ghee
- 2 tbsp Organised
- 1 tsp vanilla bean paste
Method
- Add all the ingredients to a food processor and blitz for about a minute until you have a sticky paste when pressed between your fingers.
- Using your hands shape the mixture into small balls and dust them with some extra coconut.
- Enjoy straight away out store in an airtight container in the fridge for 7-10 days.
